有田燒的歷史是從1616年，高麗陶工李參平發(fā)現(xiàn)泉山的陶石開始。 李參平是在1597年至1598年間的慶長之役中，被鍋島日軍從朝鮮帶回日本的陶工之一。

起先，他在多久安順的保護下，居住在現(xiàn)今多久地方進行陶器的制作。后來他離開了多久，其目的是為了尋找生產(chǎn)優(yōu)質(zhì)瓷器原土的旅程。他在1616年于有田的 泉山發(fā)現(xiàn)了理想的陶石而定居并開始瓷器的制作。而在有田地區(qū)，早在文祿之役(1592~1593) 時便已有許多從朝鮮被帶回的陶工在此制作陶器，而瓷器的制作，李參平是第一人。

自從泉山的瓷石礦被發(fā)現(xiàn)以來，有田的窯業(yè)可說在這之后的數(shù)十年間急速發(fā)展。而因為這 種迅速發(fā)展的盛況，造成因燃燒用的柴火不足而濫墾濫伐的現(xiàn)象，以致到了1637年，佐賀籓為 了保護山林而裁掉了826名陶工。在這事件之前陶器一直是大量生產(chǎn)，在這之后則由皿山代官 所嚴格的管理有田的陶瓷器生產(chǎn)，因而確立了以瓷器為主的生產(chǎn)體制。之后，1643年由酒井田喜三衛(wèi)門(初代的柿右衛(wèi)門)開始采用赤繪的手法(一說1646年)。喜三衛(wèi)門是從經(jīng)常出入長崎的商人那邊得到了中國赤繪的調(diào)色法，以此為本反復嘗試多次失敗后終于創(chuàng)造出他理想中的紅色。而赤繪技術(shù)也更加帶動了有田燒的發(fā)展。
